The range of Canary Island cheeses is vast. Each of the seven islands has its particular variety. The most outstanding examples are the Majorero Cheeses from Fuerteventura.
The cheese made in Tenerife is usually prepared from goat’s milk, although sometimes it is mixed with sheep or cow’s milk. Usually a fresh cheese but we can also find the smoked varieties.
Manchego is identifiable by the zigzag pattern that is etched into its rind. In Spain, this goat’s milk cheese is washed in red wine during the aging process giving the rind a deep burgundy color, flowery aroma and buttery flavor. This is known as Drunken Goat.
